Peach & Cucumber Salad with Burrata

Light, fresh, and summer on a plate.

This salad is the kind of dish that makes you stop mid-bite and close your eyes for a second. Sweet, sun-ripened peaches. Cool, crisp cucumbers. A splash of honey vinegar to bring the two together. Torn basil for fragrance and depth. And then — the crown — creamy burrata that spills into every bite like the dreamiest dressing.

A little flaky sea salt over the top, and that’s it. No fuss. No stove. Just peak produce and a few thoughtful touches.

Perfect for those sweltering days when you want something beautiful, satisfying, and wildly easy. Serve it as a starter, a side, or a lazy lunch with some crusty sourdough.

Ingredients:
3 Ripe peaches, diced
6 Fresh cucumbers, peeled and cut into 1/4" slices
2 TBSP Honey vinegar (or a splash of white balsamic + honey)

Fresh basil, torn
Burrata cheese
Flaky sea salt

To make:
Toss the peaches and cucumbers gently with honey vinegar and basil. Arrange on a plate, nestle in torn burrata, and finish with flaky sea salt.

That’s it — summer simplicity at its best.
