Salty, Crunchy, Sweet, and Seriously Addictive

These sugar & spice pecans should come with a warning—they disappear fast. Coated in a crisp, caramelized shell of brown sugar, cinnamon, and just enough cayenne for a gentle kick, they’re dangerously snackable. They're perfect for gifting, setting out at a party, or sprinkling on top of desserts. Make a double batch—you’ll thank yourself later.

Ingredients (makes about 4 cups spiced pecans)

Dry Ingredients
â…“ cup (73 g) dark brown sugar
â…” cup (133 g) granulated sugar
1 teaspoon (6 g) kosher salt
¼ teaspoon (1 g) cayenne pepper
1½ teaspoons (3 g) ground cinnamon

Wet Ingredients
1 large (30 g) egg white
1 tablespoon (15 g) water
4 cups (454 g) pecan halves


Method

Preheat the oven to 350°F (175°C). Line a sheet pan with a silicone mat (Silpat) or parchment paper.

In a medium bowl, whisk together the dark brown sugar, granulated sugar, salt, cayenne, and cinnamon until evenly combined.

In a large mixing bowl, whisk the egg white and water until very frothy but not stiff—about 30 seconds.

Add the pecans to the egg white and toss to coat evenly. Sprinkle in the sugar-spice mix and stir until the pecans are well coated and clumping slightly.

Spread the pecans out in an even layer on the prepared baking sheet.

Bake for 25–30 minutes, stirring once halfway through, until the coating is dry and crisp.

Let cool completely on the sheet pan. The sugar coating will finish setting as they cool.


Storage

Store in an airtight container at room temperature for up to 2 weeks. Great for make-ahead gifts or pre-party prep.
