Seared Cabbage Wedge with Apricot Mayo

This seared cabbage dish is a perfect example of how simple ingredients can create bold, craveable flavor. By caramelizing cabbage in a hot pan and pairing it with a tangy-sweet apricot mayo and crunchy toasted peanuts, you get a side—or even a light main—that feels fresh, modern, and deeply satisfying. Whether you're using a tender Caraflex cabbage or another variety, this is a recipe you'll return to often.

Ingredients
1 small to medium head of cabbage (preferably cone-shaped Caraflex, but any variety will work)
1 tablespoon butter
Salt, to taste
1/2 cup (120 g) mayonnaise
1/2 cup (160 g) apricot jam
1/4 cup (30 g) toasted peanuts, chopped

Instructions
If using a Caraflex cabbage, cut it into quarters, keeping the core base intact to help the wedges hold together. For other varieties, aim for similarly sized wedges with the core attached.

Heat a skillet over medium-high heat. Add the butter to the pan and allow it to melt. Place the cabbage wedges cut-side down in the pan and sear until both cut sides are deeply browned and caramelized. The cabbage should soften slightly while still holding its shape. Season with salt.

While the cabbage is searing, whisk together the mayonnaise and apricot jam in a small bowl until smooth and well combined. Taste and season with salt if needed.

To serve, spoon the apricot mayo onto each plate, smearing it slightly with the back of a spoon. Place the seared cabbage wedges on top. Drizzle with additional apricot mayo and sprinkle with chopped toasted peanuts. Serve warm or at room temperature.
