Buttery Sugar Snap Peas

Spring is in full swing, and the markets are absolutely glowing with fresh, tender produce. Among the brightest stars right now are sugar snap peas—sweet, crisp, and bursting with flavor. This simple sauté is a celebration of the season: butter-kissed peas tossed with green garlic, spring onions, and fresh herbs like mint or tarragon. It's the kind of side dish that feels luxurious in its simplicity. As chef Patrick put it, these are “French AF.” Serve them warm with just a touch of lemon zest, and you’ll understand exactly what he means. It's easy, elegant, and wildly cravable.

Ingredients
1 lb (450g) sugar snap peas
4 tablespoons (56g) unsalted butter
1 stalk green garlic, trimmed and sliced
1 spring onion, trimmed and sliced
2 tablespoons fresh herbs—mint or tarragon are ideal
Zest of 1 lemon
Salt, to taste

Instructions:

In a large sauté pan over medium heat, melt 4 tablespoons (56 grams) of butter until foamy. Trim and slice 1 stalk of green garlic and 1 spring onion, then add both to the pan. Cook for 1 to 2 minutes, stirring, until softened and fragrant but not browned.

Add 1 pound (450 grams) of sugar snap peas, trimmed, and toss to coat. Sauté for 3 to 4 minutes until the peas are bright green and just tender, still crisp.

Remove from the heat and stir in 2 tablespoons of chopped fresh herbs—mint or tarragon are best—and the finely grated zest of 1 lemon. Taste and season with a pinch of salt if needed. Serve immediately.
